War es noch vor rund 150 Jahren in Ostpreußen per Dekret verboten, „dem Gesinde öfter als dreimal in der Woche Krebse als Speise vorzusetzen“, so sind Edelkrebse heute nur mehr zu einem entsprechend hohen Preis in Spezialitätengeschäften oder -restaurants erhältlich. Grund dafür ist die im 19. Jhdt. durch Amerikakrebse eingeschleppte Krebspest, die den europäischen Edelkrebs fast vollständig ausgerottet hat.
In unseren Tagen versucht man, Edelkrebsbestände in natürlichen Gewässern wieder aufzubauen, um die steigende Nachfrage an Speisekrebsen durch gezielte Zucht und Hälterung besser abdecken zu können. Dieses Buch gibt nicht nur Auskunft über die Voraussetzungen für eine erfolgreiche Zucht von Speisekrebsen; es beschreibt auch alle dafür in Frage kommenden Krebsarten, ihre Lebensweise und deren Auswirkung als ökologisches Regulativ in unseren heimischen Gewässern. Für viele wird die Krebszucht auch ein willkommener Zuerwerb sein, wobei der Krebs jedoch wegen seiner komplizierten Anatomie und „abenteuerlichen“ Biologie gewiß nicht so einfach bewirtschaftet werden kann wie etwa unsere bekannten Zuchtfische.
